- Heat for 20 seconds at 500W to melt the gelatin. Melt slowly so it doesn't boil. Add rum and brandy to gelatin, mix well. Strain the gelatin mixture with a tea strainer and pour it into the egg yolk cream. Blend until smooth.

- Add 1/3 of the egg yolk mass to the mascarpone cream, mix well. Add the remaining egg yolk mixture in 2 parts, folding each time. Then, while cooling with cold water for 3-4 minutes, stir gently.

- Assembly】 Place the first layer of sponge into the prepared foam ring. Pour about a third of the 270g/9.5oz tiramisu cream over the cake. Repeat this process 2 more times to create 3 layers. Rest overnight.
