  7. Add the beaten eggs (at room temperature) in 2-3 portions, mix well on low speed. Add the vanilla oil and mix well.
  8. Add the dry ingredients at the same time. Use a spatula to add flour to the mixture until you get a large lump.
  9. Roll the flour in half. Use a spatula to knead and spread the flour so that it stays stuck inside the bowl. Repeat two more times.
  10. Translate and flatten with film. Leave in the fridge overnight.
  11. [Almond cream] Stir in unsalted butter until smooth. Add 2 parts granulated sugar, mix well each time. Mix with an electric mixer on low speed for 1 minute.
  12. Heat the beaten eggs with hot water to around 35℃/95 Fahrenheit body temperature. Add the butter mass to the eggs in 7-8 pieces. Mix well on low speed.
  13. Strain the chopped nuts over the mixture. Sift flour.
  14. Use a spatula until smooth. Transfer the almond cream to a small bowl, cover with cling film. Leave in the fridge overnight.
