- First, we soak the butter at room temperature. Remove the egg from the refrigerator in advance and prepare the egg white (room temperature) that is not cold. Mix flour and cocoa and sift twice.

- Beat the butter until smooth. Add powdered sugar to the butter in 3 parts, mixing well each time. Mix well with a mixer for 1 minute.

- Beat the egg white with a fork so that it does not foam. Add the egg whites to the 6-part oil mixture. Blend until smooth.

- Add almond flour, mix well with a spatula until a homogeneous mass breaks down. Add vanilla oil, mix well.

- Add flour, mix well. Cover the bowl with foil and refrigerate for 30 minutes. Preheat the oven to 190℃/374F.

- Form the mixture into round shapes or use a mold to shape them. I used a rug pattern. Each size is 4 cm/1.6 inches in diameter and 2 mm/0.08 inches thick. Leave the remaining mass in the refrigerator.

- Bake at 170℃/338F for 11 minutes and 110℃/230F for 7 minutes. Prepare the rest in the same way. Place on a wire rack to cool.

- Dip 1/3 of each cookie into the melted chocolate. Dry the chocolate and that's it. If the chocolate is not dry, refrigerate for about 5 minutes to harden.
