- Stir in butter. Crush the cubes while stirring. Use a scraper to mix while slicing to prevent the butter from melting from the heat of your fingers. Mix until a more or less uniform color is obtained.

- Pour 80% very cold water, draw circles, fold evenly. Rinse the powder area with remaining water. Roll thick to form a groove.

- Put cling film. Gently tap to achieve an even mass. Flatten it and form a square, and wrap it in plastic film. Refrigerate for 3 hours (overnight if possible).

- Remove the flour from the refrigerator. If the flour is too stiff, leave it for 5-10 minutes at room temperature to soften it a bit. Work surface, fine and flour dough. Roll out into a rectangle 5-7 mm (0.2-0.3 in) thick, toss gently with breadcrumbs.

- Fold the top third of the dough down, then the bottom third up. Roll the flour to 90 degrees.

- Repeat the entire process two more times (unfold, fold three times, turn 90 degrees, roll, fold three times, cool). The flour will gradually become soft.

- Using a sharp knife, carefully draw lines on the dough to make a leaf pattern. Arrange the leaves on a baking tray lined with butter paper. Sprinkle granulated sugar generously on top of each.

- Bake at 180°C (356°F) for 25-30 minutes. After 15 minutes, remove from the oven once, cover with parchment paper, put a flat pan on top and mash. Cool cuttings of flour, spread and cut in the same way, put in the oven. Do! Thanks !!
