- 135 g (4.8 oz) baking flour

- First soften the butter at room temperature. Sift the cake flour twice.

- Press the Earl Gray with a rolling pin until it becomes a powder. Pour the boiling water into the Earl Grey. Cover with plastic wrap and let rest for 5 minutes. Drain after 5 minutes. Set the leaves and tea aside.

- Cream the butter until smooth. Add sugar in 3 parts. Mix well each time. Beat with a hand mixer on low speed for 1-2 minutes until the mixture is white and fluffy. Scrape down the edges and mix.

- Add the milk and add a single teaspoon of the reserved tea. Beat with a hand mixer on low speed until smooth. Please clean the edges and mix.

- Scoop out as much dough as possible from the blender and return to the bowl. Add the almond flour, mix well, rub until the mixture is smooth.

- Add the reserved tea leaves, mix well. Add the flour all at once. Pour into the mixture, adding flour from time to time. Fold to form many balls.

- Place the dough on a plastic sheet. Press gently to wrap and smooth. Repeat folding and pressing about 5 times until the mixture is smooth.

- Smooth and flatten, wrap in cling film, leave overnight in the fridge.

- Take the dough out of the fridge and knead it a little until it is soft. If your dough is too hard, let it rest for 10-20 minutes before resting. Roll out to 5 mm (0.2 inch) thickness, dust with bread flour. Leave it in the fridge for 20-30 minutes.

- And then cut with a 5 cm (2 inch) cookie cutter. Roll out the rest of the dough and cut again. Preheat the oven to 190℃ / 374F. If the dough becomes soft, let it cool once in the refrigerator. If you have time, put the cut cookies in the freezer for an hour. Doing so will keep it in shape while it cooks.

- Bake at 170℃ / 338F for 20 minutes until golden, then bake at 150℃ / 302F for 5 minutes to dry. Transfer to a wire rack to cool.

- Please store in an airtight container to maintain the crisp texture. Even better, pack the dryer in a container.
